Pita Sandwich with Cheese Fries

Halloumi Cheese Fries
Original flavoured Halloumi Cheese Fries. Once cooked, the edges of these Cheese Fries get crisp, yet the center keeps its silky texture. Serve them as an appetizer or side-dish, they will be a hit at your next social gathering!
Ingredients
Lemon Tahini Sauce
- 45 ml (3 tbsp)tahini
- 45 ml (3 tbsp) plain Greek yogurt
- 45 ml (3 tbsp) olive oil
- Juice from half a lemon
- Salt
and pepper to taste
Sandwich
- 250 g pack of Saputo Halloumi Cheese Fries
- 8 pita breads
- 4 falafels
- 4 kale leaves, minced
- 2 Lebanese cucumbers
- 2 tomatoes, sliced
- 8 sticks of marinated turnip, to taste
- 8 falafels
Directions
- Fry the cheese according to the producer’s instructions. Reserve.
- In a bowl, mix the ingredients for the tahini sauce and reserve.
- Cut the avocado and the cucumbers in thin slices.
- Spread a bit of sauce on the upper part of each pita bread. Layer the kale, the cucumbers, the Saputo Halloumi Cheese Fries, the turnip sticks and the falafels on top of the sauce.
- Fold the sides so that they overlap in the middle and create a wrap. Enjoy!

"In my Italian family, gnocchi (pronounced “noh-kee”) are traditionally served with a simple homemade tomato sauce, basil and a dusting of Parmesan cheese, but over the years, I’ve experimented with new unique ways to serve gnocchi and still make Nonna proud. What takes this recipe to the next level? In my opinion, it’s the addition of Saputo’s fresh Cocktail Bocconcini in a lemon basil butter sauce. The delicious light and smooth bite-size cheese is so versatile and pairs perfectly with delicate vegetables and soft, pillowy pasta. Truly a heavenly combination! It’s like taking a bite out of little clouds.To cut the recipe time in half and keep things simple, I usually recommend using store-bought gnocchi. If you want to add a little extra colour, feel free to toss in some lightly sautéed cherry tomatoes. Lastly, don’t forget a sprinkle of toasted pine nuts for a bit of crunch. Trust me when I say you'll be making this recipe again and again!"
