Loaded Burger Halloumi Cheese Fries

Ingredients

For the Caramelized Onions & Burger Sauce

    • 2 tbsp unsalted butter
    • 3 large white onions, thinly sliced
    • 3/4 cup mayonnaise
    • 1/2 cup ketchup
    • 2 tsp yellow mustard
    • 1/4 tsp garlic powder
    • 1/4 tsp smoked paprika
    • 1/3cupfinely sliced fresh chives  
    • Sea salt and freshly cracked black pepper to taste
    •  

    For the Beef

      • 2 tbsp neutral oil
      • 1 lbs beef
      • Sea salt and freshly cracked black pepper to taste

      To build

Directions

  1. First, make the caramelized onions. Heat a skillet over medium-low heat and melt the butter. When melted, add the onions, a pinch of salt, and cook, stirring often, until the onions are beautifully golden and caramelized, about 30 - 35 minutes. Remove and set aside. 
  2. In a bowl, combine the mayo, ketchup, mustard, smoked paprika, garlic powder, chives, and about ¼ cup of the caramelized onions, then mix well and season to taste. Set aside. 
  3. Shape and form the beef into burger patties. Season them well with salt and cracked black pepper. Heat a skillet over medium heat, add the olive oil, and cook the burgers until golden, slightly charred, and cooked through, about 4 - 5 minutes per side, then chop into bite sized pieces. 
  4. Lastly, heat that same skillet again over medium-heat and all the remaining oil. Working in batches as necessary, arrange the Halloumi Cheese Fries in the skillet and cook for about 45 seconds per side until golden and crisp all over. 
  5. Arrange the Halloumi Cheese Fries on a platter, then top with the caramelized onions, beef, lettuce, burger sauce, and pickles. Game Day Deliciousness!
