Fruit Salad with Bocconcini

Ingredients

For the salad:
  • 1 (200 g) container Saputo Cocktail Bocconcini cheese
  • 1 smallcantaloupe
  • 1 small honeydew melon
  • 1/2 watermelon
  • 2 cups greens and microgreens
  • A few mint leaves, finely chopped
 
For the dressing:
  • 1/4cup olive oil
  • 3 tbsp.honey
  • Zest of 1 lime
  • 1/4 cup lime juice
  • Salt and pepper
 

Directions

  1. Using a melon baller, scoop out chunks of cantaloupe, honeydew melon, and watermelon. Set aside
  2. In a serving dish, spread the greens and microgreens. Add the melon balls.
  3. Drain the Cocktail Bocconcini, then add the entire container to the salad.
  4. In a separate bowl, add the olive oil, honey, lime zest and juice, salt and pepper. Stir with a spoon.
  5. Pour the dressing over the salad. Garnish with finely chopped mint.
  6. Enjoy as a colourful side dish, for a burst of freshness in your summer meals!
