Winter Charm Grilled Cheese

Ingredients

  • 2 slices of Saputo Havarti sliced cheese
  • 1 tbsp. (15 mL) butter
  • ½ Spanish onion, finely chopped
  • 3 tbsp. (45 mL) raisins, rehydrated in warm water (or in alcohol of your choice)
  • 1 sprig of thyme, deleafed
  • Salt and ground pepper
  • 2 slices of nut bread
  • 1 tsp. (5 mL) of butter at room temperature or mayonnaise
  • A few pieces of canned artichoke

Directions

  1. In a large skillet on high, melt butter and add onions. Brown a few minutes until golden. Lower heat and stir. Cook about 10 minutes stirring regularly. If onions start to stick to the pan, add a bit of water. Onions must be golden. About 2 minutes before the end of cooking, add raisins and thyme. Add salt and pepper, and set aside at room temperature.
  2. Preheat oven to 350°F (180°C).
  3. Spread butter or mayonnaise on slices of bread. Add a slice of Saputo Havarti sliced cheese and half the caramelized onions and artichokes on each slice of bread. Carefully fold the grilled cheese into a sandwich.
  4. Preheat a large non-stick pan to medium-low. Cook grilled cheese 3 to 4 minutes on each side until golden. Transfer to oven for 5 minutes to finish melting the cheese.
