Caprese-Inspired Pasta Salad

Generous pasta salads are a summer staple, and this one's a must-try! With the classic flavors of caprese salad, the texture of crispy pancetta and the freshness of Saputo Cocktail Bocconcini, every bite will transport you straight to Italy!

Ingredients

Salad

  • 1 box (500 g) Cavatappi pasta (pre-cooked)
  • 1 ½ cups cherry tomatoes
  • 1 ½ cups artichokes
  • 1 cup fresh basil
  • 1 cup diced pancetta
  • 1 jar Saputo Cocktail Boconcini 

Dressing

  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp. dijon mustard
  • 1 tbsp. minced garlic
  • Salt and pepper

Garnish

  • Balsamic Glaze

Directions

  1. In a frying pan, brown the pancetta cubes until crisp.
  2. While the pancetta is cooking, chop the ingredients: halve the cherry tomatoes, chop the artichokes and mince the fresh basil.
  3. Drain and dry the Saputo Bocconcini Cocktail cheese balls.
  4. In a large serving bowl, add the cooked pasta, cherry tomatoes, artichokes, basil and pancetta cubes. 
  5. In a separate bowl, combine the ingredients for the dressing: olive oil, balsamic vinegar, dijon mustard, minced garlic, salt and pepper. Mix well with a whisk or fork.
  6. Add the vinaigrette to the salad, garnish with a generous drizzle of balsamic glaze and toss well.
  7. Serve and enjoy!
