From the region of Lodi in Italy, Sovrano is a unique grana type cheese that is aged for a minimum of 18 months. The rind is hard and white in colour, whereas the interior of the cheese is straw-coloured and granular. Its flavour is slightly tangy and can thus be classified between a Parmiggiano Reggiano and a Pecorino Romano.
